Hard Drive Enclosure for PS3 Drive Replacement?

My friend and I were planning on upgrading our PlayStation 3s by backing up all the files to an external HDD, as every video tutorial explained. However, we found that it may be cheaper, faster and easier to use a Hard Drive enclosure: basically an aluminum box where you place the HDD inside, and connect it to a SATA-to-MiniUSB connection. Although the question is:
If I place the old 80GB HDD into an enclosure, will I be able to restore the files onto the new 500GB drive, or will I have to do a back up to another, blank external hard drive prior to the replacement?
